Cornish Game Hens with Rice Stuffing
Notes
To make the skin crispier, try skipping the basting and instead using dry seasonings on the outside of the hens.
Ingredients
- 2 Tablespoons butter
- 6 chopped green onions
- 3/4 cup chopped fresh parsley
- 1 1/2 cup grated carrots
- 1 1/2 cup instant rice, uncooked
- 4 cups chicken broth
- 3/4 teaspoon salt
- Cornish game hens
Instructions
- Melt butter in a medium saucepan
- Add onion, parsley and carrots
- Cook until tender
- Add rice, broth and salt
- Bring to a boil
- Cook covered over low heat for 5 minutes
- Remove from heat and let sit covered for 5 minutes
- Stuff hens with rice
- Place on a wire rack in a roasting pan and cover with foil
- Cook 30 minutes at 375 degrees
- Remove foil
- Cook an additional 60 minutes basting with melted butter every 15 minutes
