Vegetable Soup with Smoked Sausage
Ingredients
- 1 Tablespoon olive oil
- 1 chopped onion
- 1 Tablespoon minced garlic
- 2 cups chopped fresh spinach
- 1 pound smoked sausage, sliced
- 8 cups vegetable broth
- 6 ounces tomato paste
- 1 envelope onion soup mix
- 1 teaspoon basil
- 3 sprigs fresh rosemary
- 1 zucchini, diced
- 2 medium tomatoes, seeded and diced
- 20 medium stalks of asparagus, bottom 1/3 discarded, diced
- 2 cans garbanzo beans, drained and rinsed
Instructions
- Heat oil in a large stockpot
- Add garlic, onion, spinach and rosemary
- Saute 5 minutes
- Add sausage, broth, tomato paste, spices and soup mix
- Bring to boiling and reduce heat to medium
- Stir in tomatoes, zucchini and asparagus
- Cover and cook 20 minutes
- Remove rosemary sprigs
- Stir in garbanzo beans
