Roast Turkey

Try swapping the 45 and 60 minute flip to see if that makes the skin more crispy.
Ingredients
- Turkey Brine of Choice
- Olive Oil
- 14 pound turkey
Instructions
- Follow the instructions on your wet brine of choice
- Fully rinse the brine from the turkey, both inside and out
- Make an incision between the wing and the breast (armpit)
- Make another incision between the drumstick and the thigh (groin)
- Place the turkey breast side up on a roasting pan
- Spread olive oil on the breast
- Cook at 400 degrees for 60 minutes
- Flip turkey over breast side down
- Cook for 45 minutes
- Flip turkey back to breast side up
- Cook an additional 20-30 minutes until temperature is at 155 degrees
- Let the turkey rest and it will continue cooking until it reaches 165 degrees
